Sofia's Gluten Free Brownies

These brownies are a hit in my house! They are simple to throw together, making them a great baking activity to do with your kids. 

Makes about 12 brownies

Ingredients:
1 cup almond butter
2 eggs
1/3 cup cocoa powder
1/2 cup coconut milk
1/2 cup coconut crystals
1/4 teaspoon salt
1/3 cup 70 percent grain sweetened chocolate chips

Directions:
1. Preheat your oven to 350 F.
2. In a large bowl, whisk together the all ingredients until well combined and pour into a greased 9×9 oven-safe baking dish.
3. Bake for about 35 minutes, or until fully cooked.

  1. Interesting. Most gluten free recipes contain all kinds of weird gluten free flours. This one is great.

    1. My sister is gluten free and we recently went to a vegan place to get some brownies. They looked really good, but actually tasted like a lesser version of a cliff bar... big disappointment. Really excited to try these out though!

Eating healthy shouldn't have to be a chore, but a lifestyle where healthy eating is the norm and not a stress inducer.   5. Hi! I discovered you through chocolate covered Katie's blog (attracted by your chocolate peanut butter balls) and am so excited that I did! I have loved everything I've seen so far. What a beautiful girl you are, and your recipes sound not only healthy but delicous! Your family is very lucky, as are WE! Thank you so much for sharing.

    By the way, do you ever say anywhere which diet actually worked for your father ... if any? I am very curious. I have had a weight problem for years, despite a healthier diet than most, and to my great surprise, it has turned out to be linked to eating animal proteins and wheat. When I eliminate these, the weight just falls off! (I got my first clue from the blood type diet book!) I had no idea that eating a high protein diet was harmful to my particular body type! Now I can eat as much legumes as I want, despite their carbs and calories, and the weight just keeps falling. Unfortunately, I'm also discovering it much harder for me to give up the animal proteins (especially chicken) than it has ever been to give up sweets or carbs! It was quite a surprise to discover I wasn't a carb-o-holic but a carnivor-o-holic! So I'm wondering, bless his heart, did your father ever find the secret to his own weight issues?
